Yeast Dryers


Yeast dryers are used to dry the yeast coming from the fermenting cellar and storing cellar in breweries.

Unlike the yeast coming from the fermenting cellar which we dry directly, the yeast from the storing cellar can be dried only after mixing it with some yeast from the fermenting cellar. The maximum mixing ratio is 60% yeast from the fermentation cellar and 40% from the storing cellar.


Yeast Dryers - Function and Processing Sequence

The wet yeast coming from the fermenting and storing cellars is pumped to the autolysis tank of the yeast drying plant. In the autolysis tank, the yeast cells are broken up by heating the cold wet yeast to a temperature of 70° to 75° C.

A Special yeast pump conveys the hot yeast to the dryer now, where it is stored in an immersion trough. The immersion trough is fitted with a yeast overflow, and all overflowing yeast will be conveyed back into the autolysis tank.

The yeast dryer itself is a steam-heated drum dryer,i.e. a dryer fitted with a rotating steam-heated drum on which the yeast is dried.

The drum immerses in the immersion trough filled with wet yeast. Part of this yeast will stick to the hot drum surface and will dry that way. After about one drum rotation, a hydraulically adjustable yeast knife cuts the yeast off the drum surface.

A discharging screw and a subsequent pneumatic conveying system transport the dried yeast to the dry yeast silo plant. The dry yeast silo plant is fitted with a cyclone and connected air filter. A sacking weigher at the silo outlet completes the plant and sacks the dried yeast.

To obtain Iow emission values, it is recommended to clean the exhaust vapours in a wet scrubber before releasing them to the atmosphere.
